The plain arrows → and ← and the double arrows ⇒ are old characters from the Arrows block and show up nearly everywhere. The ASCII styles, such as --> and =>, are built from keyboard characters and work even in the plainest text field.

Why does one of my text arrows turn into an emoji?

A few arrow characters, such as ↔ or the thick ➡, have an emoji twin, and some phones swap them for a coloured picture. The text styles on this page avoid the most affected ones, but an arrow you add from another source can still change.
